This is the second vintage of Chardonnay icewine produced by Tawse, the first being in 2008. Ageing this dessert wine for 12 months in 100% new large oak barrels has resulted in aromas of vanilla, apricot, honey and a touch of oak. On the palate is caramel and a touch of smoke, followed by a surprising tart finish.
- Growing Conditions
Sourced from sustainably farmed Niagara Peninsula vineyards. Viticultural practices included vertical shoot positioning, shoot thinning, cluster thinning, hand leaf removal and hand harvest.
- Food Pairing
This is a surprisingly versatile icewine that can easily be paired with savoury and sweet dishes alike. Try it with blue cheese tarts or an assortment of cheeses for a contrast style pairing. Crème Brule or apple pie are perfect for a complimentary pairing. Of course this ``dessert in a glass`` can be enjoyed all on its own.

It would reflect questionable judgment to not open and enjoy this one; it’s stunning. Aromas of honeyed mango and apple pie spice mingle with baking spice before coating the palate with unfettered nectar of the gods—candied blood orange, grilled pineapple and piquant baking spice. Yin meets yang on the finish with ripe mango and lemon acidity providing a sweet and tang, fairly balanced aftertaste. Pour with pan-seared foie gras, fruit flan or blue-veined cheese.
