Winemaking Notes

Crafted in the Traditional method, from 100% Pinot Noir grapes from the Laundry Family Vineyard, this wine spent 6 years aging on lees. A very elegant and pleasing wine with aromas of ripe apple and brioche, with hints of marzipan. At first the palate shows sweet notes and a creamy mouthfeel. The finish is generous, tart and crisp.

Growing Conditions

From the 15-year old vines of the Laundry Vineyard. Farmed sustainably. Viticultural practices included vertical shoot positioning, shoot thinning, leaf thinning and hand-harvesting. Hand disgorged.

All prices include Ontario bottle deposits; $0.20 for bottles of 750 mL and $0.10 for bottles of 375 mL and less.

This traditionally made 100% Pinot Noir from the Laundry Vineyard is aged for 6 years on lees. It has quite an energetic mousse on opening with lovely lemon, brioche, pear, apple, toasted hazelnuts and biscuit on the nose. It’s crisp and fresh on the palate with a gorgeous creamy texture to complement the pear, apple and citrus fruits with toasted almonds, vanilla, brioche and lifted finesse on the vibrant finish. Just a gorgeously aged sparkler.
