TASTE OF TAWSE

A Tawse twist on the classic French 75 cocktail, this recipe incorporates everything that makes Tawse Winery & Distillery special. Tawse Gin to represent our future, Tawse Spark to represent where we started, and Lavender syrup and bitters to represent the beautiful place we call home.

1/2oz Tawse Dry Gin
1/4oz KVAS Lavender Jasmine Simple Syrup
1/4oz Freshly squeezed lemon juice
4 dashes of Tawse Lavender Bitters
A splash of Tawse Spark Blend
Garnish with lemon for extra spritz or lavender for a great visual

Heard It Through the Grapevine

An original cocktail made for summer, The Grapevine combines a bunch of our favourite warm-weather drinks at Tawse. A little bit o’ this, a little bit o’ that….and you’ve got something that looks like it’s been plucked straight off the vine! —

Gamay Ice Sphere – While you can use any size ice-tray, we love the look of the sphere!
1 Part Water: 2 Parts Tawse Gamay Noir
Freeze for longer than normal ice (the wine will take a bit to freeze!)

1oz Simple Syrup
1oz Fresh Lemon Juice
1oz Tawse Gin
Gently bruise 2 fresh basil leaves for a hint of fresh flavour
If you LOVE basil, you can also muddle one in the glass before adding ingredients.
Add a few Blackberries for a boozy treat after you’ve finished your drink.
Finish the cocktail off with some S.Pellegrino for some refreshing bubbles! We love the Cherry/Pomegranate flavour.

Grappa-cino

2oz Pinot Noir La Pressatura
1/2oz Simple Syrup
1/2oz Disaronno
1 shot of freshly made espresso
Combine ingredients over ice in cocktail shaker, shake VERY well, pour into a chilled martini or coupe glass.
Garnish with espresso beans, and enjoy!
For a bit more sweetness and an intriguing flavour, add 1oz of Maple Syrup in lieu of Simple Syrup.

Cherry Ave Mojito

The Cherry Ave Mojito is a nod to our street name, our flagship vineyard, and one of the region’s yummiest exports. The perfect balance of juicy fruit, refreshing mint, and tart acidity.

1 handful of fresh mint
3 Niagara Cherries
1/2oz KVAS Cherry Hibiscus Simple Syrup
Add ingredients to cocktail shaker. Muddle well.
Fill cocktail shaker with ice
1oz Tawse Vodka
Juice from half a lime
3 dashes of Tawse Aromatic Bitters
3 dashes of Tawse Wild Cherry Bark Bitters
Shake and strain into a coupe glass OR a highball glass over ice.
Top with Soda Water, garnish with mint, cherry, and lime!

The Haunted Vineyard

This cocktail is based off a tequila cocktail we found called The Haunted Orchard. Orchards get all the spooky fun so we’ve added a little Tawse Twist…presenting The Haunted Vineyard!⁠

1.5oz Tawse Vodka⁠
1ozLemon Juice⁠
1/2oz KVAS Ginger Wildflower Simple Syrup⁠
4 Dashes of Tawse Aromatic Bitters⁠
A Pinch of Cinnamon⁠
Combine over ice in a cocktail shaker, mix or shake well.
Pour into glass rimmed with cinnamon sugar. ⁠
Top up with Tawse Apple Cider ⁠
Garnish with a cinnamon stick or apple slice⁠
Bake your apple for a warm and tasty garnish, or mull your cider for some extra spice!⁠

 

Tawse Icewine Martini

1oz Tawse Vodka⁠
1oz Tawse Chardonnay Icewine⁠
4 Dashes Tawse Orange Bitters⁠
Combine over ice, shake or stir, and pour into a chilled coupe or martini glass. Garnish with a lemon or orange twist.⁠

Christmas in Manhattan

In celebration of the release of our Barrel-Aged Bitters, this take on the classic cocktail adds a bit of Holiday Cheer to the mix.

2oz of your favourite whisky
1oz Tawse Vermouth⁠
1/4oz KVAS Northern Maple Old Fashioned Simple Syrup⁠
4 Dashes (or more!) Tawse Barrel-Aged Bitters⁠
Garnish with an orange slice pierced with cloves⁠
