The basil, honey, strawberries, and dark chocolate work harmoniously together with our Tawse Dry Gin, bringing out some of the beautiful the herbaceous notes.

5oz Tawse Dry Gin
1/4 cup of honey
1 pint of Strawberries, de-stemmed, halved, & sprinkled with 1 tbsp sugar
4-6 fresh Basil leaves
Juice of 1 lime
1 1/2 cups of ice

Dark chocolate, grated
Whipped Cream
Strawberry half + Basil leaf
Serves 4~

Combine ingredients in blender and blend until smooth. Pour into glass leaving a 1/4 inch of space at the top. Add a thin layer of whipped cream to cover the surface area of the drink, then spoon on your dark chocolate flakes to mimic the look of garden dirt. Add your garnish decorations and presto, you have your own little strawberry patch!

Get in the Hallowe’en SPIRIT  👻 with this twist on the classic.

2 oz Tawse Vodka
½ oz Tawse Vermouth
2 oz real Cranberry juice
1 oz Apple Cider
¾ oz Rosemary Syrup (We love KVAS Cran Rosemary!)
2 dashes Tawse Barrel Aged Bitters

Combine in a cocktail shaker over ice, shake thoroughly and strain into a glass fit for Lestat. Dry ice optional, but always appreciated.

A perfect way to end a fall feast, to be enjoyed with your pumpkin pie!

2 oz. Tawse Canadian Whisky
2.5 oz. Cold Brew Coffee
1 oz Tawse Vermouth
1/2 oz Maple Syrup
2 dashes Tawse Orange Bitters

Place ingredients into cocktail shaker with ice, shake thoroughly
Strain into desired glass, garnish with orange peel.

Developed in celebration of our new Canadian Whisky release, this light and frothy drink is tart & full of flavour, yet delicate and intriguing.

2 oz. Tawse Canadian Whisky
2 oz. peach ginger simple syrup*
2 dashes Tawse Aromatic Bitters
1 oz. fresh lemon juice
1 egg white

Place ingredients into cocktail shaker, without ice, shake.
Add ice then shake again. Strain into coupe glass, and garnish with fresh peach slice!

Peach Ginger Simple Syrup

1 cup brown sugar
1 cup water
2 peaches, thinly sliced
1 tablespoon grated fresh ginger

Bring to a boil and reduce. Strain through cheesecloth

A Tawse twist on the classic French 75 cocktail, this recipe incorporates everything that makes Tawse Winery & Distillery special.

Tawse Gin to represent our future, Tawse Spark to represent our beginnings, & Tawse Vermouth to represent the union of the two. Tying it all together are Tawse Lavender Bitters represent the beautiful place we call home.

1oz Tawse Dry Gin
1/2oz Tawse Vermouth⁠
1/4oz KVAS Lavender Jasmine Simple Syrup
1/2oz Freshly squeezed lemon juice
4 dashes of Tawse Lavender Bitters
A splash of Tawse Spark Blend

Combine Gin, Vermouth, Simple Syrup, Lemon Juice, & Bitters over ice in cocktail shaker. Shake well, strain into coupe glass. Top off with Tawse Spark Blend. Garnish with lemon for extra spritz or lavender for a great visual

An original cocktail made for summer, The Grapevine combines a bunch of our favourite warm-weather drinks at Tawse. A little bit o’ this, a little bit o’ that….and you’ve got something that looks like it’s been plucked straight off the vine! —

Gamay Ice Sphere – While you can use any size ice-tray, we love the look of the sphere!
1 Part Water: 2 Parts Tawse Gamay Noir
Freeze for longer than normal ice (the wine will take a bit to freeze!)
We used this Ice Sphere Tray from Peak…

1oz Simple Syrup
1oz Fresh Lemon Juice
1oz Tawse Gin
Gently bruise 2 fresh basil leaves for a hint of fresh flavour
If you LOVE basil, you can also muddle one in the glass before adding ingredients.
Add a few Blackberries for a boozy treat after you’ve finished your drink.
Finish the cocktail off with some S.Pellegrino for some refreshing bubbles! We love the Cherry/Pomegranate flavour.

2oz Pinot Noir La Pressatura
1/2oz Simple Syrup
1/2oz Disaronno
1 shot of freshly made espresso
Combine ingredients over ice in cocktail shaker, shake VERY well, pour into a chilled martini or coupe glass.
Garnish with espresso beans, and enjoy!
For a bit more sweetness and an intriguing flavour, add 1oz of Maple Syrup in lieu of Simple Syrup.

Cherry Ave Mojito

The Cherry Ave Mojito is a nod to our street name, our flagship vineyard, and one of the region’s yummiest exports. The perfect balance of juicy fruit, refreshing mint, and tart acidity.

1 handful of fresh mint
3 Niagara Cherries
1/2oz KVAS Cherry Hibiscus Simple Syrup
Add ingredients to cocktail shaker. Muddle well.
Fill cocktail shaker with ice
1oz Tawse Vodka
Juice from half a lime
3 dashes of Tawse Aromatic Bitters
3 dashes of Tawse Wild Cherry Bark Bitters
Shake and strain into a coupe glass OR a highball glass over ice.
Top with Soda Water, garnish with mint, cherry, and lime!

The Haunted Vineyard

This cocktail is based off a tequila cocktail we found called The Haunted Orchard. Orchards get all the spooky fun so we’ve added a little Tawse Twist…presenting The Haunted Vineyard!⁠

1.5oz Tawse Vodka⁠
1ozLemon Juice⁠
1/2oz KVAS Ginger Wildflower Simple Syrup⁠
4 Dashes of Tawse Aromatic Bitters⁠
A Pinch of Cinnamon⁠
Combine over ice in a cocktail shaker, mix or shake well.
Pour into glass rimmed with cinnamon sugar. ⁠
Top up with Tawse Apple Cider ⁠
Garnish with a cinnamon stick or apple slice⁠
Bake your apple for a warm and tasty garnish, or mull your cider for some extra spice!⁠

1oz Tawse Vodka⁠
1oz Tawse Chardonnay Icewine⁠
4 Dashes Tawse Orange Bitters⁠
Combine over ice, shake or stir, and pour into a chilled coupe or martini glass. Garnish with a lemon or orange twist.⁠

In celebration of the release of our Barrel-Aged Bitters, this take on the classic cocktail adds a bit of Holiday Cheer to the mix.

2oz Tawse Canadian Whisky
1oz Tawse Vermouth⁠
1/4oz KVAS Northern Maple Old Fashioned Simple Syrup⁠
4 Dashes Tawse Barrel-Aged Bitters⁠
Garnish with an orange slice pierced with cloves⁠

This dreamy cocktail is name “The Betty Haynes” after the character played by Rosemary Clooney in the iconic film ‘White Christmas’. This dreamy, bubbly, smokey, sweet, and tart mixture is sure to have you counting your blessings this holiday season. ⁠

Rim glass with lemon and sugar ⁠
1oz Tawse Gin
1/2oz KVAS Cranberry Rosemary Simple Syrup⁠
4 Dashes of Tawse Lemon Bitters⁠
A splash of cranberry juice for colour⁠
Top off with Tawse Spark Blend⁠
Garnish with sprig of Rosemary and 2-3 Frozen Cranberries⁠
