In addition to founding the winery that bears his family name, Moray Tawse is also a wine aficionado. After realizing the potential of winemaking in Niagara, Moray purchased his first 6 acres of vineyards in 2001 and opeened his showcase winery in 2005. In his first vintage 2001 he made 200 cases. The original intents was to focus narrowly on Burgundy varieties, with high density plantings of organically farmed chardonnay and pinot noir. Today, having acquired over 200 acres he now produces 30,000 cases and has one of the largest portfolio's in the Niagara region.
Winemaker, Paul Pender, joined the Tawse team in 2005 and took on the role as head winemaker in 2006. Paul is a firm believer in 'terroir' and that great wine starts in the vineyard. Paul has seen Tawse through the process of Ecocert Organic and Demeter biodynamic certification, and in 2011 was named Winemaker of the Year at the Ontario Wine Awards.
Consulting winemaker, Pascal Marchand, has provided experience and expertise to Tawse Winery for the past 6 years. A Montreal native who has lived in France for 20 years, Marchand is an internationally acclaimed winemaker who gained renown during his tenure at Domaine des Epeneaux in Pommard, Burgundy. He also consults on Pinot Noir and Chardonnay projects in Burgundy, Chile, Australia and California.
